Since we are all friends here, it’s time to come clean. I hate salads. I strongly, strongly dislike them. Unless, of course, they are covered in candied walnuts, raspberry vinaigrette, french fries, and wine, then, in that case, I love salads.
Between trying to eat a primarily plant based diet & hating salads, one has to get a little creative when trying to find recipes to sneak those greens in. I was recently introduced to the smoothie bowl & it was love at first site. They are beautiful, easy to make (yes, really!), and a great way to trick yourself into getting those greens.
I was recently listening to a podcast about creative peoples morning routines & it has me totally inspired. Typically, I would roll out of bed, walk downstairs to my office, and get to work. Thanks to this little pep talk, I totally re-vamped my morning routine.
That means waking up earlier, reading something interesting (last week, I started How to Cook Everything & it’s got me kicking ass in the kitchen), taking a few minutes to journal, putting on real pants (as in, non-stretchy pants), and making myself a killer breakfast.
So my friends, this coming week I want to inspire you to take a little extra time for yourself and treat yourself to a healthy and delicious breakfast. Below I am sharing my favorite go-to green smoothie bowl and it’s just about the best thing. G is even into them!
1 handful of raspberries
1 tbsp of almond butter
1 cup of spinach
1 cup of Silk’s Unsweetened Almond milk
1/2 tbsp of chia seeds
1/4 cup of slivered almonds
sprinkle of coconut flakes if you like your smoothie bowls a little sweet
1. Add spinach, handful of raspberries, half the banana, and almond butter to the blender. Add almond milk on top
2. Blend until you get a nice smooth texture. For a thicker smoothie bowl, use frozen fruit or add in a few ice cubes in once everything is blended well.
3. Pour smoothie into a bowl & top with slivered almonds, chia seeds, the rest of the banana, coconut flakes, & anything else you feel like adding in!
