Happy 2016, beautiful people! Lindsey here! January is hard, am I right?! Christmas is over, it’s freaking frigid outside and we’re all trying to pretend like these resolutions will last more than a few weeks. To me, it sounds like the perfect time for some delicious, budget-friendly comfort food.

The Lazy Girl’s Fire Roasted Tomato soup came about during my college years. I wanted to surprise my husband (then boyfriend) with a delicious home-cooked meal after he’d pulled an all-nighter studying for a licensing exam. I snuck over to his house, spent hours slaving over an amazing homemade soup and it was gone in literally EIGHT minutes. If you ask me, it was amazing, but way too much work. In the years since, I’ve simplified the recipe with easy canned ingredients that take a fraction of the time and are still downright delicious! This quick and budget-friendly recipe got us through a few New York City winters and is the perfect, cozy way to kick off 2016 (especially with the addition of the fried egg and homemade croutons!). 1 10.5 oz. can Campbell’s tomato soup

1 14.5 oz can Fire Roasted petite diced tomatoes with garlic

1 15. oz can tomato sauce

1 tsp garlic salt

1/4 cup mozzarella cheese

1 cup homemade croutons* (see below)

Optional: fried egg

*** Serves 2

1. Add soup, diced tomatoes and tomato sauce to a pot

2. Sprinkle in garlic salt and bring to a simmer

3. Pro tip: While soup is heating, fry one egg for each serving of soup

4. Ladle soup into bowls and top with the fried egg and mozzarella cheese

5. Add homemade croutons or serve with garlic bread

1. Warm 1 tbsp olive oil in a pan on the stove

2. Chop a fresh baguette into crouton-size pieces

3. Add baguette pieces to pan and sprinkle with garlic sauce.

4. Toss to coat until brown
