Lazy Girl's Fire Roasted Tomato Soup

Most of the time cheap & easy are a dangerous pair when it comes to food, but Entertaining Contributor Lindsey Brunk is out to change that. We are serving up her delicious fire roasted tomato soup that is simply delicious on a cold day & ridiculously budget friendly. Add a gourmet grilled cheese, some homemade croutons (recipe below!), or as is – either way, it’s amazing! – xoxo, LK

Happy 2016, beautiful people! Lindsey here! January is hard, am I right?! Christmas is over, it’s freaking frigid outside and we’re all trying to pretend like these resolutions will last more than a few weeks. To me, it sounds like the perfect time for some delicious, budget-friendly comfort food.

The Lazy Girl’s Fire Roasted Tomato soup came about during my college years. I wanted to surprise my husband (then boyfriend) with a delicious home-cooked meal after he’d pulled an all-nighter studying for a licensing exam. I snuck over to his house, spent hours slaving over an amazing homemade soup and it was gone in literally EIGHT minutes. If you ask me, it was amazing, but way too much work. In the years since, I’ve simplified the recipe with easy canned ingredients that take a fraction of the time and are still downright delicious! This quick and budget-friendly recipe got us through a few New York City winters and is the perfect, cozy way to kick off 2016 (especially with the addition of the fried egg and homemade croutons!).
