TURKEY BACON AVOCADO BREAKFAST SANDWICH because breakfast sandwiches are the best

BREAKFAST SANDWICH

Hello friends! Constance here. Hope you’re all having a wonderful week! Guys-it’s almost March. Can you believe it? I’m not quite sure how that happened. I feel like I’m just now ready for Christmas. We’re getting ready for a crazy influx of house guests over the next month. Spring training starts soon here in Phoenix, and while I like to pretend everyone’s coming in town for some good quality hang time, let’s be real….it’s all about baseball.

Regardless, I’ve been working on coming up with some foolproof recipes that don’t have me slaving away in the kitchen all hours of the day. I definitely want our guests to have a hot meal, but I also want to keep a small ounce of sanity while doing it. My solution? Recipes that you can make in bulk and freeze for later. We’ve got more of these coming your way, but to start–biscuits. My plan is to make at least a few dozen of these before our guests begin to arrive so we can all eat our weight in breakfast sandwiches. Truly, they’re just the best. You can customize to fit any and all diets, and it’s as easy as frying a few eggs and some bacon and voila!

BREAKFAST SANDWICH

INGREDIENTS:

-2 slices thick cut bacon

-2 tbsp extra virgin olive oil

-1 large brown egg

-1 buttermilk biscuit

-sriracha

-1-2 oz. roasted turkey

-1/2 avocado, thinly sliced

-Sriracha

INSTRUCTIONS:

-In a medium sized pan, cook bacon over medium heat until crispy.

-Remove bacon from pan and add olive oil. Continue to heat on medium until olive oil is hot.

-Crack egg slowly over pan, and immediately reduce heat to low.

-Cook slowly until whites are set and yolks begin to thicken but are not hard.

-Remove egg from heat, top with fresh cracked black pepper, and set aside.

-Cut biscuit in half, and spread a light layer of Sriracha on the bottom half.

-Top with turkey, bacon, avocado, egg and the other half of the biscuit.

-Cut sandwich in half and serve immediately.

Right? And dark chocolate is basically a superfood. Thus, I bring you Ginger & Walnut Dark Chocolate Bark. It’s easy. It’s delicious. And it’s obviously super healthy…

And friends, if you’re in the same boat, this recipe is clutch. Total prep time? About 10 minutes. Total time? About 8 hours. BUT 7.5 hours of that is spent in your refrigerator which means this little recipe is foolproof! And better news? It’s truly so, so good. And it just to happens to be red, white, and green!

STAY AT HOME GALS BRUNCH

minted0001I don’t care what anyone says, brunch is the best. To me, it’s one of the best parts of being an adult. Macaroons, bellinis, a few vegetables so you can have another macaroon, and it’s basically the best time ever. Since we think every weekend should have some brunch plans involved, we’ve teamed up with Minted to host a little gals brunch!

It’s the start of the week, so you should have ample time to get inspired to host a little get together this weekend. Don’t worry, Minted makes it easy with their adorable bar cards, tags, and banners, so all you have to do is grab the food, mix up some drinks, and have your besties over. What could be better?!minted0002Now, hosting a brunch in your space might sound daunting, but I promise it’s not only a breeze, but a ton of fun!

Forget the crowd, the judgy server, and splitting the check, hosting a brunch is easy because your friends can hang out as long as they want! Plus, you’ve got the best special in town – bottomless mimosas and all you can eat treats.

We will break down the fool-proof steps for hosting a wildly successful brunch (without the fuss), but only if you promise to try it!

minted0013Okay, step one:

Go to Minted & pick out your dream brunch theme. We went with a super fun, marble palette in killer peach & gold tones and I am obsessed with them.

Not only are the themes and colors great, but the options they give you are amazing! Don’t want to DIY a banner, don’t worry, they’ve got you. How about customizable cards for the bar cart? Oh, yep, they’ve got those too. It’s like having your own personal graphic designer on hand & the best part is that you can re-use them for many events to come!

minted0024 Step Two:

Get your list of power-house brunch friends together.

Send them an email, invite them over group-text, fly a carrier pigeon to their house, we don’t care, just get those gals together!

minted0016Step Three:

It’s now time to plan the “menu.” When we say menu, we don’t mean omelette bar or anything overwhelming. We mean, the best goodies, treats, and brunch staples you can whip up (or pick up) without getting stressed.

Need some help brainstorming? Lucky for you, we have a particular love for breakfast foods. Here are our favorite recipes you can make ahead or prep the night before

minted0029Step Four:

To me, this is the best step – the prep! I love getting things ready for an event. Setting the table, adding fun details, making everything look delicious & fun – it’s the best. Who cares about a perfectly styled home, or a messy living room, no one is coming over because they want to judge the dust on your mantel (if so, you need new friends), it’s all about hanging out, spending time, and catching up!

Have a little fun while you set things up. I always put on a good playlist to get my creative juices going. Again, it doesn’t have to be perfect, it’s just got to be honest!

minted0021

Step Five:

Are you ready? This is the hardest step – HAVE A GOOD TIME!

Your friends are here, the food is perfect, the space is beautiful, and literally nothing could be better. So maybe you don’t have matching plates or some of you are drinking cocktails from a mug – but who cares?!

You did it! You got your friends together and that is the most important thing. Plus, you’ve just thrown your first stay-at-home gals brunch and it was a raging success! That deserves another cocktail in my book 😉

minted0038Love what you see? Want to host your own? SHOW US! Getting friends together and celebrating is our favorite & we would love to see how you style, prep, and throw your next bash! Tag us here or use #LKMakes. Who knows, we might even invite ourselves over next time! minted0027

CARNE ASADA TACOS

CARNE ASADO TACOS - LAUREN KELP

Happy national taco day! Just kidding….that’s not true. But we truly do believe in celebrating tacos everyday, or at least every other day. The lovely Mrs. Kelp and I originally met in the great state of Texas–Austin to be exact–and one of the stipulations for citizenry of this particular city is that you partake in tacos at least once a day. And the options abound! Breakfast tacos, chicken & waffle tacos, even dessert tacos. It’s true.

And I do believe that this common love is one of many things that truly solidified our friendship…well, tacos and french fries. Right, Lauren? And maybe wine…

Which brings us to carne asada. Many of you may disagree, but I do believe the shining star of this recipe is the marinade. It’s amazing. Basically a cilantro style pesto. So easy and so versatile. I actually even used the leftovers as a salad dressing for the rest of the week! So I beg of you, don’t make the mistake of tossing any extra…you’ll regret it.

DINNER WITH FRIENDS | LAUREN KELP

HT|DWF0037

Howdy folks! As you all know, we are doing this fun series called – Dinner With Friends. It’s like our Tablemakers concept but a little more practical. As much as I would love to have our weekly dinner party full of tree trunk chargers in the middle of a vineyard in Sonoma, it’s not always the most practical thing. But, like we always say, entertaining doesn’t have to be perfect, it just has to be honest!

So, today we are taking a peek in to my little house downtown Chicago and getting a look inside how we normally entertain. Lots of really delicious food, good drinks, and the best of friends – what more could you need?
HT|DWF0040HT|DWF0056

Since moving back to Chicago it’s been an absolute blast getting to catch up with old friends again. We kicked off the evening with a casual little “cocktail hour” on the sofa while the soup did its thing on the stove. Nothing makes me feel smarter when entertaining than having a recipe that does the work itself. No one wants to be slaving away in the kitchen while you have friends over, so don’t!

HT|DWF0050HT|DWF0042

I absolutely love having people over for dinner, but I understand that it is not everyone’s cup of tea. I think a lot of that has to do with the pressure to have a perfectly set table, a cool house, and a secret affinity for cooking. The truth is that no one cares about any of that! Everyone is just so excited to get together the rest is just toppings.

We set a really simple table that full of color and chocked full of mismatched silverware, stemware, and serving platters. They all worked together because we wanted them to, not because they matched. And guess what? No one noticed!

HT|DWF0057 HT|DWF0039Isn’t this cake delicious looking? Just wait until you taste it! Get the recipe for this surprisingly easy cake HERE!
HT|DWF0061 HT|DWF0063

The best part of the entire evening was kicking back, not being stuck in the kitchen, and catching up with people we haven’t seen in years. We told stories, drank a fair share of wine, and caught up on all things big and small. The pot of soup was emptied and the cake didn’t stand a chance. It was absolutely perfect.
