THE BEETLEJUICE COCKTAIL a deceptively delicious Halloween treat

Happy almost-Halloween, my favorite little goblins! Halloween tends to get a really bad rep, but it is truthfully one of my favorite holidays. My parents had these fabulous Halloween parties growing up – all of the furniture had sheets over it, candles everywhere, spider webs draped from every corner and column – it was an absolute blast. When you are post-college but pre-kids, it is a bit of an awkward holiday – I get it, but that doesn’t mean it isn’t an excuse to get the gang together!

Whether you are having people over for a low key potluck or hosting a spooky cocktail party, it’s imperative that you have a good speciality cocktail! And, wouldn’t you know it, we have just the thing! Meet the delicious, deceptive, and all together bad (in a good way)…BEETLEJUICE

Isn’t it fun? Perfect for a big pitcher or to whip up as your guests request them, either way – you can’t deny it’s totally spooky. The base is tequila, but it’s perfect for any cocktail lover. The el Jimador gives it a nice smokey base, but the mint and lime juice sweeten her right up.

When I have a group over for a cocktail party, I love to break out a variety of fun glasses. If you have 20 of the same wine glasses, good on ya, but if not, bust out your favorites. So, what do you think? Ready to throw a party? We thought so!

PALOMA my favorite summer cocktail

IMG_2918Well, happy Friday, friends! I don’t know about you but I am ready for summer to make her grand entrance because these little beauties have been calling my name. Festive, delicious, and wildly easy to make, the Paloma has become a warm-weather staple in our house. I discovered this little babes when living in Austin and have happily brought them with me wherever we’ve moved.

For all my grapefruit lovers, this is for you. Love margs but hate the sugar? This is for you! Searching for the perfect “go-to” cocktail this summer – oh, yeah, this is absolutely for you! Give her a try & tell us what you think!

– 1/2 cup Tequila
– 1/2 cup freshly squeezed grapefruit juice (Trader Joe’s & Whole Foods has some great ones!)
– 1/2 cup Topo Chico (if you can’t find that, use Club Soda)
– 1 tablespoon lime juice
– OPTIONAL: Salt or sugar for rim

1. If you like a salted rim, go ahead and fill a shallow plate with salt, run a lime wedge around the rim of the glass, & rim it with salt. I like my Paloma’s without salt, but it’s totally up to you!

2. Fill two glasses with a few ice cubes & add in your ingredients. Stir gently & serve, sip, repeat!

In our home, we’re firm believers in celebrating regularly. What do we celebrate on a regular basis? Tacos. With about 95% of the population. But hey, there’s a reason everyone’s doing it. If you haven’t jumped on this train yet, we highly suggest you do it…..and soon!

So, as you can tell, this post isn’t about the next best taco recipe, but about it the cocktail that was made for tacos. All hail the margarita! After a long term relationship with the jalapeno & cucumber version, my husband so kindly suggested that we mix things up a bit. And what better way to ring in summer than by adding a little watermelon to everything! This Watermelon Margarita is new favorite of ours & is so light and refreshing. PLUS! it pairs perfectly with grilled Mahi-Mahi tacos with pineapple salsa (recipe coming soon!).

-3/4 oz. fresh watermelon juice

-1/2 oz. fresh lime juice

-2 oz. tequila

-3/4 oz. Cointreau

-1/4 oz. agave nectar

-cocktail salt for rim if desired

-lime wheel to garnish

-Rim a cocktail glass or margarita glass with salt and place in the freezer to chill.

-Add the watermelon juice, lime juice, tequila, Cointreau, agave and ice to a shaker.

-Shake for about 30 seconds to chill.

-Strain into your margarita glass, float lime wheel to garnish and enjoy!
